Article Dimensional, Frictional, and Color Properties of Four Quince Cultivars (Cydonia Oblonga Miller)(Springer, 2015) Ercisli, Sezai; Boydas, Mustafa Gokalp; Kalkan, Fatih; Ozturk, Ismail; Kara, MazharBasic dimensional, frictional and color properties of four quince cultivars, namely 'KA +/- AY AyvasA +/-', 'Anzav Dere', 'Ekmek AyvasA +/-' and 'Ecem', were determined in this study. Physical features, namely length, width, geometric mean diameter, sphericity, aspect ratio, surface area, projected area, volume, mass, static coefficient of friction on aluminum, plywood and steel surfaces, and color features such as L*, a*, b*, hue angle, and chroma were determined and compared for the quince cultivars. The differences among the cultivars were statistically significant in terms of most properties investigated. The values of length, width, geometric mean diameter, sphericity, and fruit mass of four quince cultivars were established between 75.32-91.68 mm, 68.56-90.53 mm, 70.72-90.88 mm, 94.02-99.18 %, and 175.12-329.44 g., respectively. The highest static coefficient of friction (0.47) has observed for aluminum surface as the lowest static coefficient of friction (0.23) has observed for steel surface.Article İlk Kırma Valsleri Sürecinde Bazı İşletme Parametrelerinin Buğday Boyut Küçültme İşlemi Üzerindeki Etkileri(2017) Kalkan, FatihBu çalışmada, vals hızının ve vals aralığının buğday boyut küçültme işlemi üzerindeki etkileri çalışılmış; ayrıca buğdayın mevcut nem içeriği için bazı fiziksel özellikleri belirlenmiştir. Deneyler için, vals hızları sırasıyla 500 ve 525 dev dak-1 ve vals aralıkları 0.6, 0.7 ve 0.8 mm olarak seçilmiştir. Çalışmada materyal olarak Yumuşak Beyaz Kışlık buğday kullanılmıştır. Mevcut nem içeriğinde, buğday çeşidinin geometrik ortalama çap, kalınlık boyutu, bin tane ağırlığı, hacim ağırlığı ve NIR sertlik indeksi değerleri sırasıyla 3.88 mm, 2.81 mm, 43.03 g, 816.20 kg m-3, and 40 olarak saptanmıştır. Söz konusu bu buğday çeşidinin protein içeriği %9.0 k.b. olarak belirlenmiştir. Öte yandan partikül boyut dağılımı, genelde, vals hızından istatistiksel olarak etkilenmezken, vals aralığından istatisksel olarak etkilenmiştir.Article Microencapsulation of Hazelnut Oil Through Spray Drying(Taylor & Francis inc, 2017) Kalkan, Fatih; Vanga, Sai Kranthi; Murugesan, Ramesh; Orsat, Valerie; Raghavan, VijayaThis study was performed to investigate the influence of air inlet temperature (AIT) on the microencapsulation of hazelnut oil by spray drying. Encapsulated powders were analyzed for moisture content, powder yield, surface oil, encapsulation efficiency (EE), bulk density, and particle morphology. The obtained results demonstrated that moisture content, surface oil, and bulk density decreased by 37.8, 27.5, and 33%, respectively as AIT increased from 140 to 220 degrees C. However, powder yield and encapsulation efficiency increased considerably with the rise in AIT. Higher EEs of about 75-80% were observed in this study.
