The Effects of 1-Mcp (1-Methylcyclopropene) and Edible Coating Materials on the Storage and Shelf Life of Red Chief Standart Apple Variety and Kirmizi Asli̇k, Pamuk Local Apple Varieties
Abstract
Çalışmada, Van ekolojik koşullarında yetiştirilen Pamuk Elma ve Kırmızı Aslik mahalli elma çeşitleri ile Red Chief standart elma çeşidinde 1-MCP (625 ve 1250 ppb 1-MCP), yenilebilir kaplama malzemesi (%2 jelatin ve %2 kitosan) ve kombin uygulamalarının (1-MCP+yenilebilir kaplama malzemesi) depo ve raf ömrü üzerine etkileri araştırılmıştır. Çalışmada; ağırlık kaybı, pH, suda çözünür kuru madde (SÇKM), titre edilebilir asitlik (TEA), meyve eti sertliği, meyve kabuk ve et rengi, solunum hızı, dışsal etilen miktarı, malondialdehit (MDA), polifenol oksidaz (PPO), toplam fenolik içeriği, toplam antioksidan kapasitesi, bireysel fenolik içeriği ve organik asitlerde meydana gelen değişimler araştırılmıştır. Önemli kalite kriterleri bakımından (ağırlık kaybı, pH, TEA, SÇKM, meyve eti sertliği, solunum hızı, dışsal etilen miktarı, MDA, toplam fenolik içeriği ve toplam antioksidan kapasitesi) her üç elma çeşidinde birinci (2019) ve ikinci (2020) yıl, depo ve raf ömründe kombin uygulamalarının %75 oran ile etkili olduğu, özellikle %22'lik oran ile %2 jelatin+625 ppb 1-MCP uygulamasının en etkili uygulama olduğu belirlenmiştir. Pamuk Elma ve Kırmızı Aslik mahalli elma çeşidinin 130 gün depo ve 130+7 gün raf ömründe, Red Chief standart elma çeşidinin 270 gün depo ve 270+7 gün raf ömründe kombin uygulamaları ile başarılı bir şekilde depolanabileceği belirlenmiştir. Depolama çalışmalarında mahalli elma çeşitleri yeterince yer almamaktadır. Mahalli elmalar ülkemizin önemli bir genetik zenginliği olup, yetiştiği bölgelerde sevilerek tüketilmektedir. Çalışmamamızda biyoaktif bileşenler açısından mahalli elmaların standart elma çeşitlerine göre daha zengin yapıda olduğu belirlenmiştir.

In the study, changes in weight loss, pH, water soluble dry matter (SSC), titratable acidity (TEA), fruit firmness, fruit skin and flesh colour, respiration rate, exogenous ethylene content, malondialdehyde (MDA), polyphenol oxidase (PPO), total phenolic content, total antioxidant capacity, individual phenolic content and organic acids were investigated. First (2019) and second (2020) year for all three apple cultivars in terms of important quality criteria (weight loss, pH, TA, SSC, fruit firmness, respiratory rate, exogenous ethylene content, MDA, total phenolic content and total antioxidant capacity), it has been determined that the combined applications are effective with a rate of 75% in the storage and shelf life, and especially the 22% gelatin+625 ppb 1-MCP application is the most effective application. It has been determined that Pamuk Elma and Kırmızı Aslik local apple varieties can be successfully stored with 130 days storage and 130+7 days shelf life, and Red Chief standard apple variety with 270 days storage and 270+7 days shelf life with combined applications. Local apple varieties are not sufficiently included in storage studies. Local apples are an important genetic richness of our country and are consumed lovingly in the regions where they are grown. In our study, it was determined that local apples were richer in bioactive components than standard apple varieties.
