Determination of Fruit and Vegetable Consumption Structures and Purchasing Behaviors of the Household in Tuşba District of Van

Abstract

Bu tez çalışmasında, Van ili Tuşba ilçesindeki hanelerin meyve-sebze tüketim yapısı ile meyve-sebze satın alma davranışına etkili olan sosyoekonomik ve demografik faktörlerin belirlenmesi amaçlanmıştr. Araştırmanın materyalini, Van ili Tuşba ilçesinde ikamet eden ve oransal örnekleme yöntemi kullanılarak tespit edilen 272 haneden toplanan anket verileri oluşturmaktadır. Araştırma sonucunda hem kentte hem de kırsalda yaşayan hanelerin, meyve-sebze tüketimlerinin yetersiz olmakla birlikte, haneye düzenli olarak meyve-sebze alındığı ve meyve-sebze tüketmeyen hanelerin ise yeterli gelire sahip olmamaları nedeniyle meyve-sebze tüketemedikleri belirlenmiştir. Hanelerin meyve-sebze tüketiminde mevsime dikkat ettikleri ve taze tüketimi tercih ettikleri, meyve-sebze alışverişlerini süper/hiper marketlerden yaptıkları saptanmıştır. Kentsel hanelerin akşam yemeğinde, kırsal hanelerin ise ara öğünlerde olmak üzere, en az bir öğün meyve tükettiği ve en çok turunçgilleri tercih ettikleri, sebzeyi ise en çok akşam yemeğinde tüketmekle birlikte yumrulu sebzeleri tercih etttikleri tespit edilmiştir. Kentsel hanelerin, fiyatların pahalı olduğu dönemlerde tüketebilme, kırsal hanelerin ise üretimin olmadığı dönemlerde tüketebilme açısından sebzeleri konserve olarak sakladıkları, meyvelerin ise kentsel hanelerde kurutarak kırsal hanelerde de reçel yapılarak muhafaza edildiği belirlenmiştir. Ayrıca, kentsel hanelerin sağlık, kırsal hanelerin ise hijyen açısından meyve ve sebzelerin güvenilirliğini önemsediği belirlenmiştir.

In this thesis, it was aimed to determine the socioeconomic and demographic factors affecting the fruit-vegetable consumption structure and purchasing behavior of households in Tusba, Van. Material of the study consists of a survey data collected from 272 households which are determined using proportional sampling method and residing in Tuşba district of Van province. As a result of the study, it was determined that households living both in urban and rural areas had insufficient consumption of fruit and vegetables, and households that do not consume fruits and vegetables could not consume fruit and vegetables due to their insufficient income. It has been determined that households considered to the season in fruit and vegetable consumption and prefer fresh consumption, and they buy fruit and vegetable from the super/hyper markets. It was determined that urban households consumed fruit at least one meal at dinner, and rural households consumed at least one meal for snacks, and they preferred citrus fruits most, and they preferred tuber vegetables although they consume vegetables most at dinner. It has been determined that urban households preserve vegetables in canned form in order to be able to consume them when the prices are expensive and rural households to consume during periods of non-production, while fruits are dried in urban households and preserved by making jam in rural households. It was also determined that urban households care about the safety of fruits and vegetables in terms of health and rural households in terms of hygiene.
