Abstract
Bu çalışmada, Bitlis ili ve çevresindeki askeri mutfaklarda tüketime sunulan sığır karkaslarında Escherichia coli, Escherichia coli O157:H7, Staphylococcus aureus, Salmonella spp., Clostridium perfringens ve Listeria monocytogenes'in varlığı araştırıldı. Bu amaçla, askeri birliklere çeyrek gövde şeklinde getirilen toplam 200 sığır karkası (ön ve arka çeyrekten 100'er adet) mikrobiyolojik yönden incelendi. Analiz bulgularına göre; karkas örneklerinin %62 (124/200)'sinde patojen bakteri tespit edildi. Örneklerde aerob mezofil genel canlı, E. coli, E. coli O157:H7, S. aureus ve C. perfringens'in pozitiflik oranları sırasıyla %98.5, %36, %2, %30.5 ve %9.5 olarak belirlendi. Analizi yapılan örneklerde L. monocytogenes ve Salmonella spp. izole edilemedi. Sonuç olarak; incelenen karkas örneklerinin %10'u aerob mezofil genel canlı, %2'si E. coli O157:H7, %2'si S. aureus ve %20'si E. coli yönünden Milli Savunma Bakanlığı Sığır Gövde Eti (Karkas) Teknik Şartname'sine ve Türk Gıda Kodeksi'nde bildirilen mikrobiyolojik kriterlere uygunluk göstermedi.Anahtar sözcükler: Sığır karkası, kontaminasyon, patojen bakteri
In this study, the presence of Escherichia coli, Escherichia coli O157:H7, Staphylococcus aureus, Salmonella spp., Clostridium perfringens and Listeria monocytogenes in served beef carcasses at the military kitchens of Bitlis and the neighboring cities was examined. Two hundred carcasses (a quarter) were examinated microbiologically for this aim (100 samples from front and 100 samples from back of carcasses). According to the results, there were pathogenic bacteria in the 62% (124/200) of carcass samples. The positivity rates of aerobic mesophilic bacteria, E. coli, E. coli O157:H7, S. aureus and C. perfringens in the samples were 98.5%, 36%, 2%, 30.5% and 9.5% respectively. There was no L. monocytogenes and Salmonella spp. isolated in the analysed samples. As a conclusion; of the carcass samples investigated, the following cases did not comply with the carcass meat standards of Ministry of Defense and the microbiological criteria of Turkish Food Codex; 10% of aerobic mesophilic bacteria, 2% E. coli O157:H7, 2% S. aureus and 20% E. coli.
