The Effect of Different Wax Applications on Melons Storage
Abstract
Bu araştırmada Mercan- F1 kavun çeşidi kullanılmıştır. Kavun meyveleri steril kabin içerisinde 30 cm mesafede her iki yönüne 5 dakika kadar UV uygulandıktan sonra bir kısmı kontrol olarak bırakılarak ve diğer meyveler 3 farklı wax (Kontrol, Elma mumu, Citrosol Ak ve Citrosol Akue) materyali fırçalama yöntemi ile kaplandıktan sonra sonra 5ºC %85-90 oransal nemde 28 gün depolanmıştır. Çalışmada her 7 günde alınan meyve örneklerinde ağırlık kayıpları (%), suda çözünebilir kuru madde (SÇKM, %), pH, titre edilebilir asitlik (%), meyve eti rengi (L*, a*, b*, h, C), meyve kabuğu rengi (L*, a*, b*, h, C) ve C vitamini incelenmiştir. Elde edilen sonuçlara göre 28 günlük muhafaza genelde titre edilebilir asitlikte azalmalar olurken, ağırlık kayıpları, pH ve SÇKM içeriğinde artışlar görülmüştür. Ağırlık kayıpları en fazla kontrol meyvelerinde (%3.565) olurken bunu Elma Mumu (3.150) ve Citrosol Akue (3.048) ile kaplanan meyveler takip etmiştir. Farklı mumlarla kaplanan kavun meyveleri 5ºC %85-90 oransal nemde 4 hafta başarı ile muhafaza edilebilmiştir. Bu tez çalışması sonucunda elma mumu ve Citrosol ak uygulamaları başarılı olsa da kavunda en iyi kalitenin korunduğu wax uygulamasının Citrosol Akue olduğu belirlenmiştir
Mercan F1 melon cultivar was used in this study. Melon fruits were sterilized by UV applications in sterile cabine aboutly five minutes. Some of the melons were evaluated as kontrol.The other melons covered by three different waxes (Apple Wax , Citrosol Ak and,Citrosol Akue) material used brushing were storaged at 50C 85-90 % rational humudity within 28 days. The weight loses(%), soluble in water dry mater (TSS,%), pH, titratable acidity (%), fruit flesh color (L *, a *, b *, h, C), fruit peel color (L *, a *, b *, h, C) and Vitamin C were determined in melon samples in each 7 days period. As a result, the increases generally were determined in weight losses pH, soluble in water dry mater contents while decreases were determined in titratable acidity. The most weight loses were obtained in control melons (3.565 %), the lowest weight loses were obtained covered melons by Citrosol Akue (3.048 %) and Wax Apple (3.150 %). The storage within 4 weeks at 50C and 85-90 % rational humidity was found as succesfull. Allthough apple wax and Citrosol Ak applications were found succesful the most quality in melons storaged for keeping were determined by Citrosol Akue application.
