Examination of Tuna Canned Fish Offered for Sale in the Market for Heavy Metals

Abstract

Bu çalışma, Van ilinde Eylül-Kasım 2022 tarihleri arasında satışa sunulan suda, yağda ve soslu ton balığı konservelerinde ağır metal birikiminin belirlenmesi amacıyla yapılmıştır. Bu amaçla, 35 adet su içerisinde ton balığı, 35 adet yağ içerisinde ton balığı ve 35 adet sos içerisinde ton balığı olmak üzere toplam 105 adet konserve ton balığı analiz edilmiştir. Örneklerin analize hazırlanma aşamasında mikrodalga yaş yakma yöntemi kullanılmıştır. Hazırlanan örneklerin ağır metal düzeyleri İndüktif Eşleşmiş Plazma ve Kütle Spektrometre (ICP-MS) cihazı kullanılarak ölçülmüştür. Tüm verilerin ortalamaları incelendiğinde Mg, Al, P, K, Ca, Cr, Mn, Fe, Co, Ni, Cu, Zn, As, Se, Sr, Cd, Sn, Ba, Hg ve Pb soslu, ton balıkları örneklerinde sırasıyla 565.46 mg/kg, 14.16 mg/kg, 2268.95 mg/kg, 2448.32 mg/kg, 136.27 mg/kg, 0.47 mg/kg, 0.78 mg/kg, 21.99 mg/kg, 0.03 mg/kg, 0.40 mg/kg, 1.04 mg/kg, 45.84 mg/kg, 0.80 mg/kg, 0.83 mg/kg, 8.60 mg/kg, 0.68 mg/kg, 39.39 mg/kg, 4.38 mg/kg, 0.41 mg/kg, 0.09 mg/kg; suda ton balıklarında ortalama Mg, Al, P, K, Ca, Cr, Mn, Fe, Co, Ni, Cu, Zn, As, Se, Sr, Cd, Sn, Ba, Hg ve Pb değerleri sırasıyla 524.90 mg/kg, 13.65 mg/kg, 2233.17 mg/kg, 2422.14 mg/kg, 104.87 mg/kg, 0.47 mg/kg, 0.48 mg/kg, 20.64 mg/kg, 0.03 mg/kg, 0.40 mg/kg, 0.99 mg/kg, 18.85 mg/kg, 0.65 mg/kg, 0.71 mg/kg,7.27 mg/kg, 0.49 mg/kg, 37.01 mg/kg, 4.33 mg/kg, 0.15 mg/kg, 0.05 mg/kg, yağlı ton balıklarında ise Mg, Al, P, K, Ca, Cr, Mn, Fe, Co, Ni, Cu, Zn, As, Se, Sr, Cd, Sn, Ba, Hg ve Pb değerleri sırasıyla 1773.13 mg/kg, 18.85 mg/kg, 9553.04 mg/kg, 1315.84 mg/kg, 210.34 mg/kg, 0.59 mg/kg, 0.93 mg/kg, 92.22 mg/kg, 0.02 mg/kg, 0.41 mg/kg, 2.33 mg/kg, 67.07 mg/kg, 3.01 mg/kg, 3.68 mg/kg, 12.30 mg/kg, 1.91 mg/kg, 58.85 mg/kg, 5.12 mg/kg, 0.66 mg/kg ve 0.10 mg/kg olarak tespit edilmiştir. Türk Gıda Kodeksi Bulaşanlar Yönetmeliği'nin belirlediği limitlere göre tüm konserve örneklerinin biri soslu (%2.85) ve beşi yağlı (%14.28) olmak üzere altı tanesi (%5.76) Hg, 104 tanesi (%95.04) Cd bakımından kriterlerin üstünde bulunmuştur.
