Determination of Aroma Compounds in Erciş (Vitis Vinifera L. Cv. 'Erciş) Grape Cultivar

Abstract

Bu tez çalışmasında, 2013 yılında Erciş üzüm çeşidinden elde edilen şıraların aroma madde bileşimleri belirlenmiştir. Aroma maddelerinin analizi gaz kromatografisinde (GC) gerçekleştirilmiş ve bu maddelerin tanısında gaz kromatografisi-kütle spektrometresi (GC-MS) kullanılmıştır. Yapılan analizlere göre, 14'ü alkol, 1'i ester, 9'u asit, 10'u aldehit, 2'si keton, 4'ü terpen ve terpenoller olmak üzere toplam 40 adet aroma maddesi bileşimi belirlenmiştir.In this study, aroma compounds of musts obtained from 'Erciş' grape cultivar grown in 2013 season were identified. Analysis of aroma compounds were performed by gas chromatography (GC) and gas chromatography-mass spectrometry (GC-MS) was used for identification of these compounds. According to the results of analysis, from the total of 40 aroma compounds, fourteen compounds were identified as alcohol, one ester, nine acids, ten aldehydes, two ketones, and four terpenes and terpenols.
