The Consumption Structure of Red Meat and Chicken Meat of Urban and Rural Housholds in Adilcevaz District of Bitlis Province

Abstract

Bu çalışma ile Bitlis İli Adilcevaz İlçesi kentsel alanda 94 ve kırsal alanda 93 hane halkının kırmızı et ve tavuk eti tüketim yapısı karşılaştırmalı olarak incelenmiştir.Çalışmanın verileri 2009 yılına ait olup, örnek hacmi sonlu ana kitleler için örnekleme yöntemi kullanılarak belirlenmiştir.Kişi başına düşen yıllık ortalama kırmızı et tüketim miktarı kentsel ve kırsal alandaki hane halkı için sırasıyla 23.03 kg (% 70.31'i sığır eti) ve 17.01 kg'dir (% 54.87'si koyun eti). Kişi başına düşen yıllık ortalama tavuk tüketim miktarı kentsel alandaki hane halkı için 23.42 kg ve kırsal alandaki hane halkı için 20.22 kg'dır.Kırmızı et satın alırken kentsel alandaki hane halkının % 37.63'ü öncelikli olarak etin tazeliğine ve kırsal alandaki hane halkının % 28.35'ü etin yağsız oluşuna dikkat etmektedir. Tavuk eti satın alırken kentsel alanda hane halkının % 28.26'sı öncelikli olarak etin kalitesini ve kırsal alandaki hane halkının % 43.33'ü fiyatını dikkate almaktadır.Anahtar kelimeler: Kırmızı et, Tavuk eti, Tüketim yapısı, Adilcevaz.

In this study the red meat and chicken meat consumption structure of 94 urban households and 93 rural households of Adilcevaz district of Bitlis Province was investigated comparatively.The data belonged to 2009 years and the sample size was determined using the limited sampling methods for population.Yearly red meat per capita was 23.03 kg ( 70.31 % beef meat) and 17.01 kg (54.87 % mutton meat), for urban and rural households, respectively. Yearly chicken meat per capita was 23.42 kg for urban households and 20.22 kg for rural households.Out of urban households 37.63 % attached primary importance to freshness while the main concern of 28.35 % of rural househeholds was fatless meat when they purchased red meat. The quality was the major concern for 28.26 % of urban households while 43.33 % of rural households took into consideration cheapness primarily in purchasing chicken meat.Key Words: Red meat, Chicken meat, Consumption structure, Adilcevaz.
