Abstract
ÖZET DUT KURUSUNUN EKSTRAKSİYON KOŞULLARININ BELİRLENMESİ BAKKALBAŞI, Emre Yüksek Lisans Tezi, Gıda Mühendisliği Bölümü Tez I. Danışmam: Prof. Dr. Nevzat ARTIK II. Danışman: Yrd. Doç. Dr. İsa CAVİDOĞLU Kasım 2001, 46 sayfa Bu çalışmada ülkemizde yaygın olarak yetişen beyaz dut meyvesinden elde edilen dut kurusunun fiziksel ve kimyasal özellikleri ile gıda sanayinde kullanım olanakları araştırılmıştır. Dut kurusu örneklerinde ortalama toplam kuru madde %91.20. çözünür kuru madde %84.92, titrasyon asitliği %1.92, pH 5.13, ham selüloz %2.74 ve toplam kül %2.95 olarak bulunmuştur. Ayrıca enzimatik yöntemle dut kurusunun şeker bileşimi belirlenmiştir. Dut kurusunun su ile çok aşamalı çok tekrarlı ekstraksiyonunda sıcaklığın ekstraksiyon verimi üzerine etkisi araştırılmıştır. 20°C'de ekstraksiyon verimi %68.62 iken 50°C'de %70.94 ve 70°C'de %70.37 olarak bulunmuştur.' Tüm kütle transfer katsayıları ise 20°C'de 2.91 ml/dakika 50°Cde 4.68 ml/dakika ve 70°C'de 5.52 ml/dakika olarak hesaplanmıştır. Yapılan ekstraksiyon çalışmaları sonucunda, dut kurusundan elde edilen ekstraktların pekmez, şurup, pestil, dut suyu. sirke, içki ispirtosu vb. ürünlere işlenmeye uygun olduğu görülmüştür. The mean values of total solids, soluble solid, titrable acidity, pH. crude fiber, total ash were founded 91.20%, 84.92%, 1.92%, 5.12, 2.74% and 2.95% respectively. In addition, sugar composition of dried mulberry was determined by using enzymatic method. The effect of temperature on extraction yield of dried mulberry with water has been researched in multi stage extraction. The extraction yield and mass transfer coefficient in 20, 50 and 70 °C were found to be 68.62%, 70.94%, 70.27% and 2.91, 4.68 and 5.52 ml/minute respectively. After the extraction studies, it was seen that the extracts obtained from dried mulberry could be used in the production of pekmez, pestil, syrup, mulberry juice, alcohol, vinegar etc. Key words: Dried mulberry.
